The Heritage of Bravo
A Vision of Fusion
The history of Bravo is rooted in the desire to bring high-quality international cuisine to the remote beauty of central Hokkaido. Established to cater to a global audience of travelers, the restaurant was founded by chefs who trained in Italy but fell in love with the superior quality of Hokkaido’s dairy and seafood.
Over the years, Bravo has evolved from a simple resort eatery into a destination restaurant. It has become a cornerstone of the Tomamu dining scene, known for its rigorous sourcing standards and its role in elevating the local food culture by proving that Italian classics can be enhanced by Japanese terroir.
Interior Design: Rustic Sophistication
Warm Woods and Panoramic Views
The interior of Bravo Italian Restaurant is a masterclass in "Alpine Chic." The design utilizes reclaimed timber and soft, ambient lighting to create an intimate sanctuary that contrasts beautifully with the rugged, snowy landscape visible through the floor-to-ceiling windows.
The layout is thoughtfully partitioned to offer both communal energy near the open kitchen and quiet, secluded booths for private conversation. Polished stone surfaces and contemporary art pieces add a modern edge, ensuring the space feels current and luxurious without losing its welcoming, hearth-like warmth.
Renowned Signature Dishes
Hokkaido Scallop & Uni Risotto
This dish is the ultimate marriage of East and West. Creamy Carnaroli rice is slow-cooked in a rich seafood stock, topped with pan-seared scallops harvested from the nearby coast and finished with a generous portion of creamy sea urchin (uni).
The Tomamu Quattro Formaggi
Utilizing Hokkaido’s world-famous dairy, this pizza features a blend of four local cheeses, including a pungent blue and a creamy mozzarella. It is fired in a traditional stone oven until the crust is blistered and airy, served with a side of local clover honey for drizzling.
Wagyu Beef Tagliata
Premium Hokkaido Wagyu is lightly seared to highlight its incredible marbling, then sliced thin and served over a bed of fresh arugula. Finished with aged balsamic vinegar and shavings of 24-month Parmigiano-Reggiano, it is a testament to the power of simple, high-quality ingredients.
